Daddy Cook Eggs
When I make breakfast in the morning, 99% of the time, it is eggs. The other 1% of the time, I make something else because we don’t have any eggs (or it is a designated waffles/pancakes day). My 7 year old daugher E and 5 year old son C know this very well and they mostly groan now because I put spinach and other greens into the eggs.
I tell my kids that cook that kind of breakfast because I love them. I want them to start the day with a very nutritious meal and you can’t beat the nutrition of eggs and power greens very easily. The mostly eat it every morning and luckily for them, it’s not an every day thing.
My 1 year old son has slowly grown to like eggs. He hated the greens in the eggs when he was much younger. In fact, he hated eating anything green, which was the weirdest thing to see since my other two kids aren’t like that. If a piece of egg had green stuff in it, he wouldn’t touch it. It really wasn’t until I made eggs three ways a few weeks ago (because I didn’t have any greens and needed to get creative with eggs, salt, and oil) that I felt like L started to love eggs.
Fast forward to this week where L knew I went downstairs first to make breakfast. As my wife was carrying him downstairs, he said out loud that daddy cook eggs! It was so surprising that he knew I was downstairs first, knew what I was doing (and specifically making), and said the words to articulate the sentence. My wife was laughing at him and I was so surprised. L had a big smile on his face because he knew he did something great! He gobbled up the eggs and so did E and C. It was another day of starting off with a nutritious breakfast and I wouldn’t have it any other way.
